It was a really easy, painless, albeit long process. I used a mold by Wilton. My sister-in-law, Melanie, had the perfect "princess" themed mold! (Seriously people by the time with this party I should be a Wilton Spokesperson!)
And then I used two different types of chocolate. The Hershey's Premier White Chips and Ghirardelli's Semi-Sweet Chocolate Chips. (We have one of the guests who is lactose intolerant and the Ghirardelli chips are some of the only chocolate that she can eat.) A 12 oz bag of chips can make about 8 of these lollipops so that's part of the reason I did two different types since the Ghirardelli chips are so pricey.
Like I said thanks to the mold these chocolates were extremely easy to make. Start out by tempering your chocolate. I recommend the microwave heat them for 30 seconds at a time on power level 70 (did you even know that you could adjust this?) stirring with a spatula in between each time until all the chips are melted and the chocolate is smooth and shiny. At this point spoon your chocolate into a clean dry mold and spread it out to all the corners. Add the stick and then pour a little more chocolate on top of the stick to hold it in place. Gently knock the mold on the counter a few times to help remove air bubbles and then refrigerate until hard--it took about 20 minutes. Flip your mold over and carefully press the chocolates out.
Tada! What took the longest was the fact I could only do 3 at a time. But they are so adorable they are totally worth it!
